ACIDS: Small amounts of
acids, such as malic,
tartaric and citric acid, are
added to balance the
flavor. Their tartness
offsets the sweetness of
the honey while combining
with the alcohol to give a
degree of stability against
spoilage.
Some experts recommend
an acid blend composed of
twenty-five percent citric,
thirty percent malic and
forty-five percent tartaric
acids.
