Spinach, Bacon & Onion Crustless Quiche
I’ve been making this crustless quiche for several years now. It’s actually based on Dr. Atkin’s Spinach Quiche, except that I have changed the recipe per my tastes. I realize that I have a lot of quiche recipes on the blog, but I would much rather have a quiche than an omelette or fried or scrambled eggs. And as far as quiches go, this one is my favorite….well, maybe it’s tied with the Gorgonzola, Pear and Bacon Tart which has a really nice walnut crust, and the Ham & Arugula Quiche With Creamy Havarti and Smoked Gouda, which has amazing knock-you-down flavor. But this one is way more easy to prepare! I really like this quiche because it is not custardy. Not a word" That’s okay, you know what I mean. I like a custard texture with my desserts but it’s not something I enjoy as much in a quiche. To me, chunky and custardy should never mix! I should also confess that it is my preference to brown, or even over cook my quiches — just a bit, in order to firm them up – I also like the color and flavor it adds. As I said, I’ve been making this quiche for several years now and I have probably eaten it 40 out of 52 weeks a year. It’s great for those individuals who have started the Induction phase of Atkins and need to have a set number of carbs to start their day. Looking at a day of 20 net carbs can be a little intimidating, but having a set carb count in the morning, can help you plan the day a little bit better.
