2.2. Sample preparation
RTC meat products were procured from supermarket (Shoprite Hyper, Mumbai, India).
The products selected for the present study were chicken seekh kababs, chicken balls and mutton seekh kababs.
Chicken meat balls are prepared from ground meat, spices and flour.
They are pre-cooked in boiling water bath.
Each meatball weighed about 15 g and in contained 60 g meat/100 g of product
and other ingredients were breadcrumbs, wheat flour, soy protein
isolate, textured vegetable protein, iodized salt, spices and condiments
(onion, ginger, garlic, chili, pepper etc.),
