homogenized with 20 ml of 10% trichloroacetic acid using
an Ultra-Turrax T25 (IKA-Labortechnik, Staufen, Germany)
at 13,500rpm for 10 s. After homogenization and centrifugation
at 4000rpm and 4 ◦C for 30 min, the supernatant
was decanted through a paper filter. 2ml of the filtrate
was mixed with 2ml of aqueous thiobarbituric acid and
heated in a water bath for 20 min at 97 ◦C. The mixture
had cooled to ambient temperature. The absorbance values
of the final solutions and the blank were recorded at
532nm in a Shimadzu spectrophotometer. TBARS values
were calculated from a standard curve and expressed as
mg malondialdehyde (MDA) per kg of meat (mg MDA/kg
of meat).
