General FA composition of salmon scales
The lipid composition of the salmon scales were dominated
by phospholipids which accounted for 81%, while the triacylglycerides
made out 12%, the remaining 7% being free
FAs, as determined by three replicate analyses of 5 g scales
from one of the large salmon from the stability study. The
analytical method determined the total amounts of FAs in
all three fractions.
