The flavor of beef results from lipid oxidation and/or degradation , thermal degradation and interreaction of proteins, peptides, amino acid, sugars and nucleotides, and thermal degradation of thiamine.
These reactions produce many important beef aroma components.
Maarse and Visscher have classified some 880 aroma components from cook beef6 and found that 25 of them possessed a meaty odor.
