Food standards legislation is in place for labelling, composition,and safety parameters for speciflc foodstuffs which could potentially be replaced with lower-quality alternatives,including bottled water,bread and flour,fats and oils,fish,meat,and milk.These regution are set and enforced by the Department for Environment, Food & Rural Affairs (Defra), the Foods Standards Agency (FSA),and the Department of Health.Separate from UK legislation, the Food Information Regulation(FIR) provisitions,introduced by the European parliament,include several key rulings on labelling.In addition, there are standards called Codex Alimentarius,which are being developed internationnally with the World Health Organization,providing detailed codes of practice for the food and agricultural industries.
