Liquid smoke flavouring (Red Arrow, SmokEz-M-10, mesquite wood-based smoke) and water-soluble thyme oil were purchased from a food additives company (GMT Food Ingredients Co., Istan-bul, Turkey). The thyme oil was added in the brine solution at two different concentrations (10 and 50 ppm), along with the li-quid smoke flavouring. The pH of the thyme oil used was 5.78 (1% solution). Volatile oil content was 9.52%.
