3.4. Weight loss
Weight loss in fresh fruit and vegetables results in a short enedshelf-life and loss of economic value. Additionally, this parameter has a strong impact on the appearance, due to shrinkage. Both temperature and storage time contributed to increased weight loss in peppers and apples. Fig. 4 (left) shows weight loss during the storage of uncoated peppers compared to peppers coated with pullulan and pullulan + SH extract.
