In terms of the time-dependent
decrease of GSH-Px, DeVore and Greene (1982) found that in meat
the decrease in GSH-Px activity was a function of the regeneration
of glutathione (GSH) with GSH reductase in the presence of
NADPH; Tabatabaie and Floyd (1994) reported that GSH-Px was
self inactivated by reactive oxygen species.
