Sarcomeres in 0-d NS muscle samples contain
distinct A-bands, I-bands, and Z-lines (Figure 6a) and
have an average length of 2.5 ± .2 mm (n = 62). In
0-d ES muscle, contraction nodes (CN) formed in five
animals (3 through 7) that received three
20-s periods of ES (Figure 6b). The first two animals
(1 and 2 in Table 1) used in this study received three
15-s stimuli, as we had done previously with Bos
taurus cattle (Ho et al., 1994), but a slightly
inadequate pH decrease required a subsequent increase
in stimulation duration for the other animals.
Contraction nodes were not seen in the 0-d samples
from the first two animals that received the
15-s stimulation. At 1 d PM, however, CN were
present in muscle from six animals, and from 3
through 28 d, CN were seen in muscle from all seven
