Two-way ANOVA of Batch 4 demonstrated that pH (p = 0.04)and temperature (p = 0.02) had significant effects despite the narrow range of conditions. Two-way ANOVA of batch 5 demonstrated that neither pH (p = 0.08) nor temperature (p = 0.61) were significant in the range of 5.25–5.75 and 39–43◦C respectively, although additional data would likely demonstrate that pH is significant at˛ = 0.05. In batch 5, pH 5.5 and 43◦C resulted in the highest concentration of lactate, however there was no significant difference between results at 39–43◦C at pH 5.5 (p = 0.94). It can be concluded that small perturbations in pH and temperature can have significant results on lactate concentration and each batch of food waste can exhibit a different response. However, a pH of 5.5 and 41◦C consistently maximized the concentration. Two additional replicates from batch 4 were digested at pH 5.5, 41◦C with results of 37.0,39.1, and 40.8 g L−1 lactate indicating repeat ability within batches.
