The synergic stabilization mechanism of high internal phase
W/O emulsion was proposed by Zou et al. [22]. Here the authors
demonstrated that neither surfactant nor particles was suitable
to emulsion stabilization. However, the dual emulsifier system
allowed satisfactory result for emulsion preparation. In the
obtained W/O emulsion, big emulsion droplets were preferentially
stabilized by particles, while small ones were preferentially stabilized
by surfactant molecules. Thus, the increase in particles
concentration resulted in higher amount of big emulsion droplets,
and the increase in surfactant concentration favored the formation
of fine emulsion droplets. Therefore, the wide droplet size distribution played a key role for the synergic stabilization of W/O emulsion with mixed emulsifier system.
