According to the results (Table 2) decreasing bran particle
size increased the lightness (L-value), while reduced the
redness (a-value) and blueness (b-value) of the samples. The
inner layers of the bran which are closer to the endosperm
are generally ground into smaller particle sizes during milling.
These layers contain more starchy materials and hence
are lighter in color than the outer layers.
