Changes in the CIE L⁄a⁄b⁄ values estimated using a colorimeter
are shown in Fig. 5. Overall, L⁄ values decreased and a⁄ and b⁄ values
increased for all periods. In particular, the CO group showed a
rapid decrease in the L⁄ and b⁄ values and an increase in the a⁄ value. This indicated that CO group develops browning more
quickly, consistent with the results of the sensory test and image
analysis.
