In the present study, feeding of VCO resulted in decreased
concentrations of all the lipids tested (cholesterol,
triglycerides, and phospholipids) when compared with CO.
An explanation for the lower lipid levels in serum and
tissues (liver, heart, and kidney) accompanying VCO feeding
may be due to the relative rate of synthesis and
catabolism of these lipids. It is possible that the minor
and/or unsaponifiable components in VCO may be influencing
the rate of synthesis and oxidation of fatty acids in
the liver. In the previous study (unpublished data), HMG
