Throughout the frozen storage period, all the indicators, except TVBN, TN, cohesiveness, and springiness, decreased significantly, at all temperatures. TVBN increased with the decay of frozen storage temperature to values below the generally accepted limit of 30–35 mg/100 g muscle. The highest value of 28.9 ± 6.41 mg/100 g muscle was registered at 268 K after 28 days of storage.
