Then they changed smally with
ethanolic concentrations increasing. However, the content of carotenoids in extracted solution increased very quickly when the
concentration of ethanol gets to 60%. That is to say, the red pigments
were extracted largely with 60% ethanol as solvent. The results
showed that the loss of red colorants was about 1.6% of total
contents of red pigments in FRPs when 50% ethanol is used as the
solvent of extracting capsaicinoids. Therefore, 50% ethanol was
selected as the optimal concentration for removal of capsaicinoids
from FRPs so that red pigments could be preserved as much as
possible in the residues after removal of capsaicinoids.
