Unfortunately Iceland can’t claim its own breed of omelette, but if you wanted to give an omelette an Icelandic twist you could add some Icelandic herbs such as moss, angelica or birch. I personally love omelettes, but only if they properly cooked. I learned to make the perfect omelette from Raymond Blanc when I was at Le Manoir aux Quat’Saisons – he’s very particular about this dish so my standards are high as result!
