Banana (Musa, AAA group, cv. Brazil) is one of the most
important fruits in the developing countries of Asia, Latin
America and Africa. As a climacteric fruit, bananas are
commercially harvested at mature green stage, and initiated
to ripen by ethylene treatment before marketing. To achieve
high quality ripe bananas for the market, particularly to obtain
the fruit of attractively golden yellow appearance, bananas
are recommended to ripen under controlled conditions of
appropriate temperatures (18–22°C), relative humidity (90%)
and properly ventilated environments (Wills et al. 1998).
