The chitin of fungi possesses principally the
same structure as the chitin occurring in
other organisms (see Chapter 15, this volume).
However, a major difference results
from the fact that fungal chitin is associated
with other polysaccharides which do not
occur in the exoskeleton of arthropods.
Furthermore, the occurrence of chitosan is
apparently restricted to fungi.
