2.4. Texture analysis
The firmness of tomatoes was determined using a TA-91 Kramer
shear probe attached to a TA.XT2 texture analyzer (Texture Technology
Corp., Scarsdale, NY, USA). The probe was set to move through the
holding cell for 50mm at a pretest speed of 6.0 mm/s, test speed of
3.0 mm/s, and posttest speed of 10.0 mm/s. Samples of 5 g were placed
in the holding cell for eachmeasurement; each treatmentwasmeasured
6 times. The firmness of tomatoeswas calculated by dividing peak force
(N) by distance (mm).
