ˠ-Aminobutyric acid (GABA) has calming effects, enhances sleep, and suppresses mild hypertension. Several lactic acid bacteria (LAB) possess GABA-producing ability and can be used as probiotic cultures. The aim of this study was to isolate and characterize potential GABA-producing bacteria for probiotic fermentation of rice milk. From a total of 118 fermented Thai foods, 55 isolates could grow in rice milk and produced GABA. Ten isolates were selected due to their high GABA-producing capacities and tested for their blood hemolysis capability. All strains were non-hemolytic and thus were preliminary identified by the API-50 CHL test kit.
