2.2. Chemical determinations
Fillets bought as defrosted products were analysed
immediately. Fillets bought frozen were rapidly thawed
under running cold water in a vacuum-sealed bag. The
glaze liquid released in the bag during thawing was accurately
discarded and drained fillets were homogenised in
a Waring blender (Waring Products Division, New Hartford,
CT) for about 60 s at a low speed.
