Rice brans were extracted using commonly used organic solvents such as absolute methanol, ethanol, and acetone as well as aqueous mixtures of those organic solvents. We measured the DPPH radical assay, total phenolic content, and the total flavonoid content in a variety of extract solutions from 4 brans, 3 pigmented rice brans, and 1 brown rice bran, to select the effective extraction solvent for antioxidant activity. The DPPH radical scavengingt3 abilities of pigmented rice bran obtained from different extraction solvents are shown in Table 1. The extract solutions from pigmented rice bran showed approximately 10% to 84% of DPPH radical scavenging ability,depending on the type and concentration of applied solvents. The aqueous mixtures of acetone, ethanol, and methanol showed higher DPPH radical scavenging ability at concentrations of 40% to 80% compared to absolute solvents.
