2.7. Total phenolic compounds
Total phenolic compounds were quantified according to the Gao,
Ohlander, Jeppsson, Bjork, and Traljkovski (2000) method with some
modifications. Two milliliters of distilled water were mixed with 200
μL of Folin and Ciocalteu reagent (Sigma-Aldrich, Toluca, Mexico) and
100 μL of centrifuged (40,000 rpm during 20 min) coconut milk in an
amber tube. One mL of 20% Na2CO3 was added to the mixture after 3
min of incubation at room temperature. The mixture was incubated at
room temperature for 1 h in dark environmental conditions. The
absorbancewasmeasured at 765 nmusing a UNICO UV–visible spectrophotometer
(NJ, USA). The total phenolic compounds (TPC) were quantified
as mg of Gallic acid/100 mL of coconut milk, using the next
