This study reports that RGEs have inhibitory effects on the production of NO and pro-inflammatory cytokines induced by LPS through HO-1 activation. The anti-inflammatory effect was greater for FRGE compared with HRGE. In addition, the allicin concentration was reduced by short-term heating and was able to change the production of NO and pro-inflammatory cytokines and the HO-1 activity. Our findings indicate that allicin is responsible for the anti-inflammatory effect of FRGE.
