As shown inFig. 3the formulations containing added sugar
(SAC) or sugar substitutes (SYNB, SUC and SUC-P) received greater
acceptance due to the increased perception of sweetness (taste and
aroma) and bitter aftertaste, which are attributes that contribute
positively to the acceptance of the products. On the other hand, the
pure juice (PUR) was less preferred, most likely due to its more
intense apple flavour, apple aroma, and sour taste, and its lower
sweetness. According toCosta, Fontele, Jesus, and Rodrigues (2013)
consumers tend to prefer juices with added sugar because of the
sweet taste by itself but also because an increase in the concentrations of sugar helps in reduce the perception of a sour taste
