A study was conducted to find the effect of composite edible coating on the physicochemical properties of tomatoes stored at
ambient conditions. The parameters evaluated were titratable acidity, pH, vitamin C content, TSS and total and reducing
sugars. The effect of coating was found statistically significant for all parameters except pH for coated samples as compared
to control sample. The effect of storage period was also evaluated for same parameters and it was observed that the storage
period affects significantly on quality parameters of tomatoes
