On the basis of those findings, new PEF experiments were designed, but with some restrictions. A new series of experiments was conducted with lower spore load (104 spores mL1) to simulate a scenario that is closer to conditions in industry. Since PEF treatment lasts only microseconds, the spore inactivation was tested at a processing temperature of 55 C together with electric pulses.
