To perform the instrumental measure

To perform the instrumental measurements of quality of the meat,
samples were thawed in tap water for 15 min inside their vacuum
bags then modified atmosphere packaged (70%O2:20%CO2:10%N2)
with an Ulma Taurus machine (Ulma S. Coop., Spain) with a product/
gas ratio of 1:2. Polyethylene trays were used (reference A6/32/PETEVOH-
PE/T; Formas y Envases S.A., Spain) and sealing was done with
a polyethylene and polyamide laminate film (50 μm, water vapour
transmission rate of b5 g/m2.day at 23 °C and 85% RH, an O2 transmission
rate of b5 cm3/m2.day at 23 °C and 0% RH and a CO2 transmission
rate of b25 cm3/m2.day at 23 °C and 0% RH; Linpac Packaging S.L.,
Spain). The trays were preserved at 2–4 °C in darkness until completing
the correspondent display duration (DD) of 0, 3 and/or 6 d after thawing
when analyses were performed.
The remaining 8 carcasses were not frozen (0 months FSD). Animals
followed the sameslaughter, chilling, splitting, sampling, packaging and
display procedures described above. Thus, animals were slaughtered
24 h before meat quality had to be measured and, instead of freezing
and thawing, fresh meat samples were immediately packaged, refrigerated
(2–4 °C) and analysed at the correspondent display (0, 3, 6 d DD).
