Finney (1983) has reviewed and analysed the effects of germination on vitamin contents of numerous cereals and legumes. According to his provided data, we can summarise the effects of soya bean germination on vitamin contents of the seeds. A short period (2-6 days) of germination of soya bean enhances ascorbic acid, ribofavin, niacin, biotin and pyridoxine contents; however, pantothenic acid and thiamin content remains unchanged. Few articles were reviewed which directly related the effects of germination of soya beans to their vitamin A activity; however, the effects of germination on seed carotene content have been studied.
