While a great deal of information is available on the use of ultraviolet
light (UV-C) to inactivate common foodborne pathogens,
relatively little information is available on the inactivation of
Y. pestis on foods with ultraviolet light. The purpose of this study
was to determine the ability of Y. pestis to survive treatment with
UV-C on agar plates, food contact surfaces, and foods using a
commercial UV-C conveyor.
