Rice extrudates prepared by pre- extrusion addition of 1% citric acid and 2.5% beetroot colour were packed in polyethylene and metallised polyethylene, stored at ambient temperature (30+-2 C) and evaluated under light intensity of 500 lx during 28 days storage. The half-life (t1/2) for colour to decrease to 50% of its initial content was evaluated as per our previous work (Durge et al.2011).
