It exhibits an
excellent film-forming capacity that has been successfully applied
to the coating of fishery products, fresh-cut fruits and
vegetables, meat, and other food products to extend their shelf
life (Saxena et al. 2013; Souza et al. 2010). Moreover, chitosan
can also be a carrier for various functional compounds
(with antioxidant, antimicrobial or other activities) to enhance
product quality (Qiu et al. 2014; Ramezani et al. 2015;
Siripatrawan and Noipha 2012)
