celery powder were perceived in deli ham formulations. The presence
of undesirable vegetable aroma and flavor was found by Sindelar et al.
(2007) for hams containing a high level (0.35%) of vegetable juice powder.
From these results, it is suggested that the use of natural, vegetable
based powders, including celery powder, as sources of nitrites in hams
may be limited due to undesirable sensory properties. For formulations
that include celery powder and in applications that are applicable, the
addition of spices and/or elevated smoking regimens may assist in
masking any off flavors that may be perceived.
