100g (3 1/2 oz.) feta cheese
2 tbsp lemon juice
1 garlic clove, crushed
1 tsp grated lemon zest
4 tbsp extra-virgin olive oil
3 tbsp chopped fresh mint or flat-leaf parsley
freshly ground black pepper
Place all the ingredients except the mint or parsley in a food processor and process until smooth. Add the mint or parsley and process briefly to mix.
