Ice cream of good microbiological quality is produced by using high-quality raw materials, closely monitoring the production process, taking special care on hygiene during production, storage, distribution, and sale, in addition to implementation of a good operating hazard analysis critical control point system. When these are applied, the risk of foodborne diseases from contaminated ice cream is minimized and its reputation as a high-risk food is proved unjustified.
