During service
Service places the glasses and cups in racks according to category and size on the stainless steel shelf above the sorting table.
Service places the soiled cutlery in the container with the solution water.
Service pre sort the soiled dishes and place the dishes of the same category and size per decoy system.
Service disposes of wet and dry garbage bins respectively.
Stewards will replace glass and cups rack when they are full with an empty rack.
Stewards will transfer stainless steel ware from pre soaking containers to a cutlery rack.
Stewards will remove soiled dishes from sorting tables and transfer to dishwashing machines as necessary.
