The action of enzymes on the plant cell wall was distinctly identified using SEM. The microscopic imaging of black pepper and cardamom demonstrated the action of enzymes on the cell wall of the spices which may have resulted in higher yield of volatile components. The control sample of black pepper (Fig. 2) showed morphology similar to a honey comb. These honey combs like structure were closer to each other and were also connected to each other.
