When pigs transported for 40 min, loading and unloading procedure may also cause much stress reaction at slaughter and consequently post-mortem metabolism. At the same time, 5 h transportation was so long to make the pigs fell much stress and fatigue and then influence muscle more active metabolism to resist stress. In addition, 40 min and 5 h transport plan both led the pigs to release more cortisol. Previous study suggested that pre-slaughter muscle metabolic status also depends on the hormonal status(Terlouw and Rybarczyk, 2008).
