This indicated swelling of the particles upon redispersion
in the aqueous phase. The swelling can be attributed
to the polyelectrolyte nature of the whey protein gels. The particles
without calcium had a surface mean diameter (d32) of 2.8 ± 0.2 lm,
in full agreement with a d32 of 2.7 lm reported before (Sag˘lam
et al., 2011). Note that in the present work, the diameter is
reported as d43.
