The nutritional and fatty acid profiles of meat from goats supplemented with MOL, SC or GH are presented inTables 1 and 2.The ratios of total polyunsaturated fatty acids (PUFA)/saturated fatty acids (SFA) (PUFA/SFA) in the current study ranged between 0.17 and 0.41
in LTL meat samples and the proportions of desirable fatty acids
[18:0+monounsaturated fatty acids (MUFA)+PUFA] ranged between
74.81% and 76.38% (Table 4). The total unsaturated fatty acids of meat
from goats supplemented with GH, MO and SC were 55.55%, 57.56%
and 58.15% respectively.Tables 3 and 4indicated that meat from
goats supplemented with MOL had the highest (Pb0.05) AA while
those supplemented with grass hay had the lowest AA
