Fig. 2 shows the lethality of the thermal treatments. In Salmonella Senftenberg 775 W, the efficacy of the thermal pasteurization acting alone (which achieved 0.4 log10 cycles of inactivation) was not enhanced by the addition of any EO or IC, since the total lethality of the combined processed ranged between 0.2 and 0.6 log10 cycles (p N 0.05) (Fig. 2A). In L. monocytogenes, only the incorporation of mandarin EO and of (+)-limonene increased in 0.9 and 1.3 log10 cycles, respectively, the lethality of thermal pasteurization acting alone (p N 0.05) (Fig. 2B).
