Avrami equation was widely used for studying the kinetics of
starch retrogradation, that was because of Avrami exponent (n)
reflecting the crystal morphology of the nucleation process (Beck,
Jekle, & Becker, 2011) and crystallization rate constant (k) reflecting
the speed of crystallization (Iturriaga, Lopez de Mishima, &
