The initial DPPH radical scavenging activity at one day significantly increased up to
360 days. Similarly, the hydrogen peroxide scavenging activity of the 80% ethanol extracts increased at 180 days and declined, but not significantly at 360 days (p > 0.05). Thus, prolonged fermentation of shrimp paste contributed to a significant increase in antioxidant activity (p < 0.05).
