3.2.3. Relationship between diets and fatty acid profile
One interesting point found in this study is that there were no differences in IMF and SCF saturation when pigs were fed diets with or without added fat. Bee et al. (2002) reported that the saturated-tounsaturated ratio was constant in membrane polar lipids and that the effects of dietary fatty acids were limited to an exchange between MUFA and PUFA, which was in agreement with our results. On the other hand, the diet without added fat used in this experiment had similar results to diets rich in SFA and MUFA such as AF and CaSPO1. It is known that dietary fat inclusion reduces de novo fat synthesis (Duran- Montgé et al., 2010). In fact, the control diet used in this research had a very lowfat content (crude fat 2.23%), so, therewas only a small amount of exogenous fat which would not interfere in de novo fat synthesis and would therefore produce a high percentage of SFA and MUFA. Another interesting point is that the SCF and IMF of pigs fed SBO gave rise to the lowest monounsaturated and the highest polyunsaturated fats. Dietary PUFA of the n-6 family are known to impair the activity of the stearoyl-CoA desaturase, the key enzyme in the desaturation process of stearic acid (Kouba & Mourot, 1998); thus, the inhibitory nature associated with increased concentrations of C18:2n-6 in the SBO diets may explain the reduced concentrations of MUFA in the M. Longissimus of SBO-fed pigs (Apple, Maxwell, Galloway, Hutchison, et al., 2009). Furthermore, our results were in agreement with Apple, Maxwell, Galloway, Hutchison, et al. (2009), who reported that the increase in oleic acid in the M. Longissimus of control and BT-fed pigs, which is determined by the dietary supply as well as by the elongation and desaturation of the saturated homologs, could produce a reduction of the concentrations of PUFA by dilution with MUFA (Riley, Enser, Nute, & Wood, 2000).
