Maturity
Ginger rhizomes (Zingiber officinale Roscoe) were
harvested from Petchaboon province, Thailand. The

ginger rhizomes were divided into 3 groups according
to their age of 4–6, 7–9, and 10–12 months. Moisture

were determined. A completely randomized design
was used to study the factors affecting ginger rhizome
maturity. Two replications were used to determine the
main factors. SPSS version 16 for Windows was used
to do ANOVA
