may be enhanced or inhibited by the pressure, depending
on the positive or negative effects of volume change that associating
with the reaction. Pressure-inducing changes in the catalytic
rate may be due to the variations in the enzymeesubstrate interaction
or the reaction mechanism, as well as the effects on the
particular rate-limiting step or the overall catalytic rate. Interestingly,
high residual activities of PPO and POD in all pressurized
batches were observed in this study.
