3. Results and discussion
3.1. Effect of thermal treatment
The effect of thermal treatment on the stability of the coconut
milk emulsion (quantified by oil yield) is shown in Fig. 1. The coconut
oil yield was found to increase with an increase in temperature.
The maximum oil yield of 86% was observed at 90 C.
